Goji Berry and Almond Protein Balls

Ingredients - makes 12

  • 1 cup of Almonds

  • 1 cup of Dates

  • ¼ cup of Goji Berries

  • 1 scoop (20g) Chocolate or plain protein powder

  • ¼ cup of cold water

  • 100g bar of dark chocolate (min 70%)

Toppings - optional

  • Himalayan Sea Salt

  • Desiccated Coconut

Instructions

  • Melt the dark chocolate on the hob in a bowl over some simmering water, making sure the water does not touch the bowl. Or melt in the microwave.

  • Blend the Almonds, dates goji berries and protein powder in a blender or food processor. Then slowly add the water whilst blending until the mixture starts to bind.

  • Using a tablespoon amount, shape and roll each ball, then dip each one into the melted dark chocolate until covered. Place each ball on a plate lined with parchment paper or cling film if you have none.

  • Place in the fridge for 1 hour and enjoy. Can be stored in fridge for up to 7 days and placed in freezer for up to 3 months.

  • Optional - Sprinkle 6 with the sea salt and 6 with the coconut.
